Irancy

Nose of red fruit — raspberry, cherry, morello cherry — and black fruit, floral hints of violet. Full-bodied, rich palate.

Located in the Les Mazelots vineyard, in Irancy, on marl-limestone soil with a South-West exposure. Area: 1.5 ha. Average vine age: 50 years. Yield: 45 hL/ha.

Winemaking

The grapes are destemmed then tanked for a 48-hour cold pre-fermentation maceration. Fermentation starts naturally, with a light, daily pump-over to moisten the cap; any form of forced extraction is avoided in order to obtain fine, easy-drinking wines. The tank is emptied without the use of a pump. Winemaking follows Burgundian tradition: complete alcoholic and malolactic fermentations, combined with a few controlled modern techniques to preserve quality and freshness. Ageing takes place from November to June, followed by very light filtration before bottling at the estate.

Tasting

On the nose, red fruit dominates: raspberry, cherry, a touch of morello cherry. Black fruit — blackcurrant, blackberry — heightens this vivid, fresh aromatic palette, on a richer tone. Violet sometimes brings floral accents. With age, Irancy evokes spice, truffle, leather, undergrowth. On the palate, full-bodied and rich, it shows a marked balance between substance and liveliness. A few years of cellaring give it elegance and depth.

Aligoté

Dry, light and powerful, aromas of white fruit and white flowers. Beautiful acidity, freshness and character.

Tasting

A dry, light and powerful wine, with aromas of white fruit, vine peach and white flowers. Very fresh, elegant and full of character, with beautiful acidity. Its directness calls for delicate but creamy-textured dishes, such as a fish pie. It can also be served with quenelles, fine fish or an aubergine tian.
